The cider is made from Pink Lady apples grown in our orchard using a selected wine yeast and then aged for 6 months on fine lees before bottling. The yeast chosen for fermentation produces as crisp and clean cider that with minimal back-sweetening allows more of the yeast produced Esters to come through the profile.
